Meatless Monday with Mexican Style Lasagna

Hello and welcome (back) to the Miratel blog for another Meatless Monday. We took the Meatless Monday pledge as part of our CSR business initiatives as it supports reducing meat consumption by 15% to improve personal health and the health of the planet. Every week we share a vegetarian recipe and try to keep them as simple and do-able as possible.

Today we are trying Italian-Mexican fusion for dinner with this Mexican style lasagna that the whole family will love. This is a great way to get kids to eat beans and spinach as they are disguised in this cheesy and scrumptious meal. This recipe comes courtesy of the talented folks over at Martha Stewart Everyday Food. Let’s get cooking.

CSR Business Initiative Meatless Monday recipe Mexican Italian Lasagna

Ingredients – serves 4

  • 1 cup fresh cilantro leaves
  • 4 scallions coarsely, chopped
  • Coarse salt and ground pepper
  • 10 ounces fresh baby spinach
  • Nonstick cooking spray
  • 8 (6-inch) corn tortillas
  • 1 can (15.5 ounces) pinto beans, drained and rinsed
  • 1 cup prepared salsa (mild or medium)
  • 8 ounces pepper Jack cheese, grated (about 2 cups)

Directions

  1. Preheat oven to 425 degrees. In a food processor, combine cilantro, scallions, 1 teaspoon salt, and 1/4 teaspoon pepper with as much spinach as will fit; pulse, adding remaining spinach in batches, until coarsely chopped.
  2. Coat an 8-inch square baking dish with cooking spray. Lay 4 tortillas in bottom of dish (they will overlap slightly). Layer with half of beans, salsa, spinach mixture, and cheese; repeat with remaining ingredients, ending with cheese and pressing in gently.
  3. Cover dish with foil; place on a rimmed baking sheet. Bake until bubbling, 25 to 30 minutes; remove foil, and continue baking until golden, 15 to 20 minutes more. Cool 5 to 10 minutes before serving.

If you don’t want to use pepper jack cheese you can substitute it for a milder cheese like Munster or even fontina or another of your choice. You can also swap it for a non-dairy cheese to make this dish vegan. If you want to add fibre to this meal, you can use whole-wheat, whole-grain, or even spelt tortillas. Serve with a green salad.
