Meatless Monday with a Happy (Canadian) Vegan Thanksgiving Meal

Making your Thanksgiving vegan doesn’t mean you can’t enjoy a flavourful and decadent meal. That’s why today we’re sharing The Best Green Bean Casserole from FatFree Vegan Kitchen, an amazing Lentil and Mushroom Loaf with Savoury Potato Filling from the Heathen Vegan and a you’ll-never-know-it’s-vegan Pumpkin Pie from The Kind Life. The Best Green Bean Casserole Ingredients

  • Beansmeatless-monday-Best-Vegan-Green-Bean-Casserole
  • 2 quarts water
  • 1 tablespoon table salt (Alanna says it’s essential)
  • 1 1/2 pounds fresh green beans, trimmed and cut into bite-size pieces

Sauce

  • 10 ounces mushrooms (I used a combination of regular button mushrooms and shiitake)
  • 3 cloves garlic, minced
  • generous pinch cayenne pepper (had to add it for the New Orleanians)
  • Salt to taste
  • Fresh pepper to taste
  • 2 tablespoons flour
  • 3/4 cup vegetable broth (I used Imagine’s No-Chicken)
  • 1 tablespoon dry sherry (Alanna’s brilliant addition)
  • 3/4 cup soy creamer (or try full-fat unsweetened soymilk)

Topping

  • 1 1/2 slices whole grain bread
  • 1 tablespoon vegan margarine
  • 1/8 teaspoon salt
  • 1/16 teaspoon freshly ground black pepper
  • 1 3-ounce can of French fried onions

Lentil and Mushroom Loaf with Savoury Potato Filling Ingredients

  • 1 cup Raw Lentilsmeatless-monday-lentil-mushroom-loaf-potato-onion-filling
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic, minced
  • 6 ounces white Mushrooms
  • 5 ounces (l/2 package) thawed frozen Spinach
  • 1 tablespoon Soy Sauce
  • 2 tablespoons Wheat Germ
  • freshly ground Pepper to taste
  • dash Nutmeg

Filling

  • 1 tablespoon Olive Oil
  • 1 medium chopped Onion
  • 1/4 cup dry Bread crumbs (I make my own and use 5 seed whole meal bread – about 2 slices)
  • 1 cup coarsely mashed Potato (from about 1 medium cooked and peeled potato)
  • ½ teaspoon each: seasoned Salt, dried Thyme, and dried Sage
  • freshly ground Pepper to taste
  • curly Parsley for garnish

Pumpkin Pie Ingredients

  • can (16 ounces) pureed pumpkin 1 nameatless-monday-vegan-pumpkin-pie
  • maple syrup 0.5 cup
  • salt 0.5 tsp
  • ground cinnamon 1 tsp
  • ground ginger 0.5 tsp
  • ground cloves 0.25 tsp
  • ground allspice
  • optional 1 tsp
  • ground nutmeg
  • optional 0.5 tsp
  • cornstarch to firm up the pie filling 3 tbsp
  • package (10-12 ounces) silken/soft tofu 1 na
  • 9-in unbaked vegan pie shell 1 na

Serve these great dishes with a big green salad and some crusty bread. These recipes prove that you can have an amazing plant based meal on any occasion (even one where the food is centered around a mass turkey slaughter).
