Meatless Monday with Fresh Veggie Summer Rolls with Spicy Garlic Peanut Sauce

With the warm weather, our food preference tends to turn to lighter fare and today’s Fresh Veggie Summer Rolls with Spicy Garlic Peanut Sauce is the perfect meal that will satisfy the palate, the body and the hunger. Plus you can use fresh local produce that is at its best in flavour and quality right now. Although we have featured some great BBQ recipes like the Vegan Eggplant Crunchburger, the Vegan Kidney Bean & Walnut Burgers and Mississippi Comeback Sauce and the Grilled Vegetable and Tofu “Lasagna” with Pesto sometimes it’s good to have something that is high-raw and requires minimal cooking. These amazing rolls are from our favourite vegan resource, One Green Planet.

INGREDIENTS (serves 2-4)

For the Peanut Sauce

  • 2 garlic cloves, minced
  • 1 tablespoon chunk of ginger, peeled and finely chopped
  • 2 tablespoons each of tamari, maple syrup, and lime juice
  • Chili powder, to tastemeatless-monday-Veggie-Summer-Rolls-Spicy-Garlic-Peanut-Sauce
  • 1/3 cup peanut butter
  • 1/3 cup water (more or less as needed)

For the Rolls

  • 1 cup cooked vermicelli (AKA rice noodles)
  • 5-8 rice paper sheets
  • 1 carrot
  • 1 avocado
  • 1/3 cucumber
  • 1 cup fresh basil
  • 1/2 cup cilantro
  • 5-8 kale leaves
  • 1/2 red pepper

DIRECTIONS

For the Peanut Sauce

  1. Blend or mix together all the ingredients until smooth.
  2. If you like, sautee the garlic and ginger first to bring out more flavour.
  3. Set aside in a bowl.

For the Wraps

  1. Cut all the veggies into thin strips.
  2. Dip your rice paper sheets in warm water so they soften and become pliable (do this one at a time), then arrange your fillings in the middle.
  3. Fold over two ends, then wrap it up like a burrito, making it as tight as possible.
  4. It might take a few tries to get it perfect. Serve with the sauce and enjoy nature’s elegant beauty.
  5. You can make these totally raw by leaving out the vermicelli and using collard greens or seaweed instead of rice paper.
