Meatless Monday with Kale with Tomato, Garlic, and Thyme Pasta

Hello and welcome (back) for another installment of our Meatless Monday vegan recipe share series. Miratel took the Meatless Monday pledge as it encourages eliminating meat from your diet one day per week to preserve the health of our planet (and ourselves!). Making a great vegan meal might seem daunting, but we’re here to help take the guesswork out of what to make for dinner. On the menu tonight is a kale with tomato, garlic, and thyme pasta, which comes by way of the Martha Stewart kitchens at Everyday Food. Nutritious, satisfying and easy to make – what more can you ask for? Let’s get cooking.

Ingredients (serves 4)

  • 1 tablespoons plus two teaspoons extra-virgin olive oilMeatless-Monday-Kale-Tomato-Garlic-Thyme-Pasta
  • 2 cloves garlic
  • 2 cups cherry tomatoes
  • 1 1/2 teaspoons fresh thyme leaves
  • 1 pound boiled, chopped kale leaves
  • Coarse salt and ground pepper
  • I lb Long pasta

Directions:

  1. In a large skillet, heat 1 tablespoon olive oil over medium.
  2. Add garlic cloves, thinly sliced, and cook, stirring, until fragrant, 30 seconds.
  3. Add cherry tomatoes, quartered, and fresh thyme leaves.
  4. Cook until tomatoes begin to break down, 2 minutes.
  5. Add kale and cook until heated through, 2 minutes.
  6. Season with salt and pepper.
  7. Drizzle with 2 teaspoons oil.
  8. Toss with boiled pasta.

If you want to make this meal even healthier you can choose a whole wheat, whole grain or gluten-free pasta over traditional pasta. This simple switch will add fibre to your dish and help keep you feeling fuller longer. A long, thick pasta like fettuccini or linguini would work best however you could also use something thinner or even a short pasta if that is what you have on hand. If the pasta is too thin or small the kale with tomato, garlic, and thyme sauce will overwhelm it and that will take away from the dish.

If you don’t use all the sauce on the pasta you serve it as a side dish or serve over crostini. Thus, any leftover sauce can be put to good use. If you want to have leftover sauce don’t toss it all with pasta.
