Meatless Monday with More Vegan Christmas Cookies

Season’s Greetings and welcome to the Miratel blog for another holiday edition of our Meatless Monday vegan recipe share. Miratel took the Meatless Monday pledge to support reducing meat consumption 15% by eliminating it one day per week to preserve the health of our planet. We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.

Holidays can be a difficult time to navigate through for vegans being surrounded by sweets and treats of mainly the non-vegan variety. You may believe that vegan baking is either extremely difficult or lacks flavours but that couldn’t be further from the truth. That is why today we thought we would continue the vegan holiday cookie series (that we started earlier – you can read it here) with three more recipes from our friends at One Green Planet, an amazing resource for all things good for the planet like being vegan. When in vegan doubt, check them out. Seriously.

Raw Spiced Orange Thumbprint Cookies Ingredients (makes 12 cookies)raw vegan spiced orange thumbprint cookies

For the cookies

  • 3/4 cup raw almonds
  • 1 tbsp almond butter
  • 3/4 cup chopped dates
  • +/- 10 tsp water
  • 2 tsp mixed spices (ground cinnamon, ginger, nutmeg and cloves)
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp stevia (optional; you can also use agave if you prefer)

For the cream filling

  • 1/2 cup l freshly squeezed orange
  • juice zest of one orange
  • 1/2 cup raw cashews, soaked for ten minutes
  • 1 tbsp agave syrup

Soft, Chewy Gingerbread Cookies Ingredients (makes 32 cookies)

  • 2 cups gluten-free all-purpose flour (I used Bob’s Red Mill GF All Purpose Baking Flour)
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. sea salt
  • ½ tsp. nutmeg, ground
  • ½ tsp. cloves, ground
  • 1 tsp. cinnamon, ground
  • 1 tsp. ginger, ground
  • ¼ cup sunflower oil
  • ¾ cup cane sugar
  • ¼ cup molasses
  • ¼ cup almond milk

*about 1 – 2 Tbsp. confectioner’s sugar (optional for decorating)

Vegan White Chocolate Candy Cane Cups Ingredients (makes 18-20 candies)

  • 4 oz Cacao Butter
  • 2/3 cup Confectioner’s Sugar
  • 1 tbsp Soy Milk Powder
  • 1/2 tsp Peppermint Extract
  • 1 Candy Cane, crushed
