Meatless Monday with Quinoa Stuffed Peppers and a Mexican Salad

Welcome to the Miratel blog for another Meatless Monday vegan recipe share. The Meatless Monday pledge aims to reduce meat consumption 15% by eliminating it one day per week to preserve personal and planetary health. It might seem daunting to think of meat-free meals but we’re helping to take the guesswork out of this by sharing new recipes with you each Monday and today we have one packed with a superfood. Quinoa stuffed peppers are off the charts healthy, filling and oh so delicious. This recipe includes optional cheese which you can leave out if you are vegan or include if you prefer vegetarian meals. This recipe comes from Better Balanced Life. We are pairing this with a fresh Mexican Salad with Tomatoes, Red Onions and Avocado Dressing from Food Network’s Rachel Ray.

Quinoa Stuffed Peppers Ingredients:

  • 1 medium onion, finely chopped (1 cup)
  • 2 Tbs. olive oil
  • 2 ribs celery, finely chopped (½ cup)
  • 1 Tbs. ground cumin
  • 1 clove garlic, minced (1 tsp.)
  • 2 15-oz. cans diced tomatoes, drained, liquid reserved
  • 1 15-oz. can black beans, rinsed and drained
  • 3/4 cup quinoa
  • 3 large carrots, grated (1 ½ cups)
  • 3/4 cups vegan cheddar cheese (optional)
  • 4 large red bell peppers, halved lengthwise, ribs removed

Directions:

  1. Heat oil in saucepan over medium heat. Add onion and celery, and cook 5 minutes, or until soft. Add cumin and garlic, and sauté 1 minute. Stir in drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated.
  2. Stir in black beans, quinoa, carrots, and 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer 20 minutes, or until quinoa is tender.
  3. Preheat oven to 350°F. Pour liquid from tomatoes in bottom of baking dish.
  4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour.
  5. If desired, uncover and sprinkle half of the peppers with the remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned.
  6. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

Mexican Salad Ingredients:

  • 2 heads bib lettuce, cleaned and dried
  • 4 medium red vine ripe tomatoes, cut into wedges
  • 2 medium yellow vine ripe tomatoes, cut into wedges
  • 1/2 large red onion, thinly sliced plus 3 tablespoons chopped red onion

Dressing:

  • 1 ripe avocado
  • 3 lemons, juiced
  • Handful fresh cilantro leaves, 2 tablespoons
  • 1 teaspoon coarse salt
  • 3 tablespoons water, a couple of splashes
  • 3 tablespoons extra-virgin olive oil

Directions

  1. Build your salad on a large platter. Use bib lettuce as the bed, then layer the tomatoes and scatter the red onions around the platter.
  2. Cut the avocado in half lengthwise cutting around the pit. Separate the halves and scoop out the pit with a spoon, then use the spoon to scoop the avocado from its skin. Place the avocado in a food processor bowl and combine with lemon juice, chopped red onion, cilantro, coarse salt and water. Grind until the avocado mixture is smooth, then stream oil into dressing. Adjust seasonings and pour over salad, then serve.
