Meatless Monday with Vegan Christmas Cookies

Season’s Greetings and welcome to the Miratel blog for a holiday edition of our Meatless Monday vegan recipe share. Miratel took the Meatless Monday pledge to support reducing meat consumption 15% by eliminating it one day per week to preserve the health of our planet. We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.

During the holidays we all tend to be surrounded by sweets and delectable confections; however, vegans often get excluded from these treats. You may believe that vegan baking is either extremely difficult or lacking in flavours, which couldn’t be further from the truth. That is why today we thought we would deviate from main courses and share some fabulous cookie recipes from our friends at One Green Planet, an amazing resource for all things good for the planet like being vegan.

Coconut, Almond, and Raspberry Jam Thumbprint Cookies Ingredients (makes 15 cookies)vegan thumbprint cookies

  • 1 tbsp ground flaxseed
  • 2 tbsp very hot water (about 180°F/82°C)
  • ½ cup/120 ml melted coconut oil
  • ½ cup/100 g sugar
  • 1 cup/140 g whole-wheat pastry flour
  • ¾ tsp baking powder
  • ¼ tsp salt
  • ¼ cup/40 g raw, unsalted almonds, lightly toasted and finely chopped
  • ½ cup/40 g unsweetened shredded coconut
  • 5 tbsp/75 ml raspberry jam

Thin Mint Cookies Ingredients (makes 30 cookies)

For the cookies

  • scant 1/2 cup whole wheat pastry flour or gluten free flour. (Level 1/2 cup of flour, then remove 2 tablespoons worth)
  • 4 tablespoons cocoa powdervegan thin mints
  • 1 teaspoon ground golden flax seed
  • 1/4 t. baking powder
  • pinch sea salt
  • 1/3 cup agave
  • 1/4 cup melted coconut oil (use refined if you don’t want these cookies tasting like coconut)
  • 2-3 drops food grade peppermint essential oil or 1 teaspoon peppermint extract

For the chocolate outside layer

  • 1/2 cup vegan chocolate chips, melted
  • 1 teaspoon coconut oil
  • 1-2 drops food grade peppermint essential oil or 1/2 teaspoon peppermint extract

Gingerbread Folk Cookies Ingredients

  • 1 ½ cups + 1 tbsp sifted spelt flour (see note in directions) vegan gingerbread folk cookies
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1⁄4 + 1/8 tsp sea salt
  • 1 tsp cinnamon
  • 1/8 tsp ground cloves
  • ¾ tsp ground ginger
  • 1/8 tsp allspice
  • 1/3 cup organic extra-virgin coconut oil (at room temperature so softened), or can use organic canola oil (see note)
  • 1⁄2 cup unrefined sugar
  • 2 tbsp molasses (blackstrap or regular cooking molasses)
  • 2 tbsp non-dairy milk (see note)
  • 2 tbsp pure maple syrup

Simple Gingerbread Icing

  • 1 cup powdered sugar (see note)
  • 1½ – 2 tbsp vanilla non-dairy milk (‘non-dairy nog’ is very nice here!
