Meatless Monday with Vegan Kung Pao Tofu

Welcome (back) to the Miratel blog for a new edition of our Meatless Monday recipe share series. With Chinese New Year approaching we thought we would feature a traditional spicy stir-fry usually made with chicken, peanuts, vegetables, and chili peppers but made vegan. Today’s Vegan Kung Pao Tofu version will make going meat-free easier and proves that you can be vegan and still continue eating some of your favourite takeaway . This deliciously spicy take on the Chinese classic dish comes via the website China Sichuan Food. Although it is not a vegan food blog, it does have a few very good vegan recipes like this one today.

Ingredients (serves 2):

  • 1 pound firm tofu or extra firm tofu

  • 3 tablespoons vegetable cooking oil
  • 1 green pepper sliced
  • 1 red pepper sliced (or with dried chili pepper)
  • 3 gloves garlic, minced
  • 1 inch root ginger sliced
  • 5 scallions get the white part for stir-frying and the green part for garnish

Stir-fry Sauce:

  • 1 tablespoon light soy sauce
  • 2 teaspoons dark soy sauce
  • 2 teaspoons sugar
  • 1 teaspoon cornstarch
  • 2 teaspoons black vinegar (if not available, can be substituted with balsamic but sugar may have to be adjusted/decreased to taste)
  • 1 teaspoon sesame oil
  • 1 tablespoon water


  1. Cut the firm tofu into cubes around 4~6 cm long. And then drain to remove the water on the surface.
  2. Cut red pepper and green pepper into small slices.
  3. Heat up 3 tablespoons of peanut oil in wok. And get the cubes in to stir-fry until tofu becomes gold-brown in surface. Move the tofu cubes out and pour the extra oil out of the wok, only left around 2 teaspoons in.
  4. In a small bowl, mix all the ingredients for stir-fry sauce.
  5. Get ginger, garlic and scallions in to stir-fry until you can smell the aroma; return tofu cubes in along with pepper slices. Stir-fry until the pepper slices becomes soft.
  6. Add the sauce to wok and mix well. If you want to add roasted peanuts in, add it after pour the stir-fry sauce in.
  7. Transfer all the content to a serving plate and garnish some chopped spring onions.

You can serve this with some steamed brown rice and garlic broccoli or bok choy.
