Meatless Monday with Vegan Middle Eastern Chickpea & Rice Salad

Now that it’s starting to get a little warmer and daylight is extending, our thoughts turn to lighter fare and salads are generally involved but they don’t have to just be lettuce. The best salads incorporate all food groups and are a meal in a bowl. Today’s recipe is is a perfect example of this – it is a quick and healthy meal full of fresh veggies, fibre and protein. This delicious recipe for Middle Eastern Chickpea & Rice Salad which comes courtesy of VegNews. Oh and it’s also gluten-free.

Vegan Middle Eastern Chickpea & Rice Salad Ingredients (serves 10)

  • Meatless-Monday-Middle-Eastern-Chickpea-Rice-Salad1/4 cup fresh lemon juice
  • Peel of 1 lemon, cut into strips
  • 2 tablespoons olive oil
  • 1 minced garlic clove
  • 2 red peppers, cut into wide strips
  • 3-1/2 cups cooked brown rice
  • 1 15-ounce can garbanzo beans, drained and rinsed
  • 24 cherry tomatoes, halved
  • 1 cup pitted kalamata olives
  • 1 cucumber, peeled, deseeded, and diced
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup finely diced red onion


  1. Preheat broiler. In a bowl, combine lemon juice, lemon peel, olive oil, and garlic. Set aside.
  2. Place red peppers on baking sheet and broil until skin bubbles and starts to turn black. Remove peppers from broiler and place in a covered bowl for 5 minutes. Remove outer skin, and dice peppers.
  3. In a large bowl, combine rice, beans, tomatoes, olives, cucumber, parsley, onion, and peppers and toss with lemon juice dressing.

Don’t worry about the quantity being too much as this salad makes for great leftovers. This is a light meal that can be made quickly which makes it perfect for a hot, humid summer night when you want to keep cooking to a minimum. Also, if you’re invited to a potluck or barbecue this summer, you now have a go-to recipe that can be used as both a side dish and vegan offering. You can safely serve this dish outside, as it is temperature stable. Serve with a leafy green salad to increase your veggies.
