Meatless Monday with Vegan Super Bowl Party Food

Welcome to the Miratel blog for a very special Super Bowl edition of our vegan Meatless Monday recipe series. The Meatless Monday pledge aims to reduce meat consumption 15% by eliminating it one day per week to preserve personal and planetary health. You may well be aware that Miratel has taken the pledge to support this great initiative, which we have included as part of our CSR business strategies to spread awareness of the impact of food choices on our environment.

We are continuing our vegan Super Bowl food party theme this week because accommodating your vegan guests is easy and we wouldn’t be surprised if even the most avowed carnivores are happy to dig in and enjoy the fare. Check out the delicious vegan Super Bowl Buffet Food we put together last week. We are not saying these recipes are necessarily your healthiest vegan options, but they are plant-based and a healthier option than their meat counterparts. We have some great new recipes from our friends at PETA plus a few of our own faves.

Homemade Caramel Popcorn (makes 10 cups)

  • 10 cups popcorn, popped
  • 1/2 cup roasted peanuts
  • 1/2 cup soy margarine (try Earth Balance)
  • 1 cup brown sugar, packed
  • 1/4 cup corn syrup
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  1. Preheat the oven to 250°F. Grease a large baking pan with a generous amount of margarine and set aside.
  2. In a large bowl or two, combine the popcorn and the peanuts and set aside.
  3. In a heavy saucepan, combine the margarine, brown sugar, and corn syrup and whisk over medium heat until the margarine melts. Bring to a boil and let cook, without stirring, for about 4 minutes, or until the mixture reaches 255°F on a candy thermometer.
  4. Remove from the heat and stir in the vanilla, salt, and baking soda, then gradually pour over the popcorn and nuts, stirring to coat. Pour the popcorn into the baking pan and place in the oven.
  5. Cook for 45 minutes to 1 hour, stirring often. Remove from the oven and let cool completely before storing.

Spicy Buffalo Cauliflower ‘Wings’ (makes 4 servings)

  • 1 cup water or soy milk
  • 1 cup flour (any kind will work—even gluten-free!)
  • 2 tsp. garlic powder
  • 1 head of cauliflower, chopped into pieces
  • 1 cup buffalo or hot sauce
  • 1 Tbsp. olive oil or melted vegan margarine
  1. Preheat the oven to 450°F.
  2. Combine the water or soy milk, flour, and garlic powder in a bowl and stir until well combined.
  3. Coat the cauliflower pieces with the flour mixture and place in a shallow baking dish. Bake for 18 minutes.
  4. While the cauliflower is baking, combine your buffalo sauce and olive oil or margarine in a small bowl.
  5. Pour the hot sauce mixture over the baked cauliflower and continue baking for an additional 5 to 8 minutes.

Oreo-Stuffed Chocolate-Chip Cookies

  • 2 cups unbleached flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • Cinnamon, to taste (optional)
  • Handful vegan chocolate or carob chips
  • 1 cup raw sugar
  • 1/2 cup canola or vegetable oil
  • 1 tsp. vanilla
  • 1/4 cup water
  • Oreos (or generic equivalent)
  1. In a large bowl, mix together the flour, baking powder, salt, and cinnamon. Stir in the chips. Make a well in the center and set aside.
  2. In a medium-size bowl, add the sugar and the oil. Mix well. Add the vanilla and then the water. Mix well.
  3. Pour the wet ingredients into the well in the dry ingredients. Mix well, but be careful not to overdo it. Add more chips if necessary.
  4. Preheat the oven to 350°F.
  5. Form balls with the dough.*
  6. Place one ball on top of an Oreo cookie and another ball on the bottom. Seal the edges together by pressing and cupping in your hands until the Oreo cookie is fully enclosed within the dough.
  7. Bake the cookies for approximately 15 minutes or until golden brown.

  1. So how do you make vegan Oreo stuffed cookies when oreos are NOT Vegan?!!!

  2. According to PETA, http://www.peta.org/living/food/accidentally-vegan/, Oreos are vegan in North America. I’m vegan and although I don’t eat Oreos, I have seen the ingredients online and I agree with PETA. Do you have reason to believe otherwise?
