Meatless Monday with Vegan Tofu Sticky Fingers with Blue Cheese Sauce

We often write about the versatility of tofu and its ability to suit a variety of recipes because of how it can take on any flavour and texture depending on how it’s treated. We have featured many examples of this versatility in recipes like Sweet & Spicy Cola Tofu, Crispy Chipotle Tofu, Maple Sesame Tofu, Beer Battered Fish Tofu and today’s Tofu Sticky Fingers with Blue Cheese Sauce. According to the chef who created this great recipe, “These sticky tofu fingers are the ultimate game day treat. The tofu crispy tofu is marinated well before being tossed in a tangy, sweet sauce and served with a decadent, chunky blue ‘cheese’ sauce to dip in.” This deliciously sticky dish comes courtesy of Lauren Hartmann of Rabbit and Wolves, a great vegan website via the consistently inspiring One Green Planet.

INGREDIENTS (serves 6)

FOR THE TOFU:

  • 1 14-ounce block extra firm tofu, pressedVegan Tofu Sticky Fingers with blue cheese sauce
  • 2 tablespoons all-purpose flour
  • 1 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups panko

FOR THE SAUCE:

  • 1 1/2 cup brown sugar
  • 1/3 cup hot sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon water

FOR THE BLUE CHEESE DIP:

  • 1/4 block extra firm tofu, pressed
  • 1 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • 1 teaspoon tahini
  • 1 teaspoon salt

PREPARATION

  1. Preheat the oven to 425°F.
  2. Cut pressed tofu into strips about an inch wide and 1/2-inch thick. Place into a sealable plastic bag and toss in the 2 tablespoons of flour.
  3. Place the almond milk and apple cider vinegar in a bowl and stir. Let sit for a minute to thicken. Place the panko in another bowl.
  4. Dip each piece of tofu into the almond milk and then coat with the panko.
  5. Place them onto a baking sheet sprayed with nonstick spray. Repeat with each piece of tofu.
  6. Line them up next to each other on the pan. Spray each piece of tofu with more nonstick spray.
  7. Bake them at 425°F for 15-20 minutes until they’re brown and crispy.
  8. While the tofu is baking, make the sauce. Add all the sauce ingredients to a small saucepan.
  9. Heat them on medium high, whisking them until the sugar has dissolved.
  10. Turn the stove on low and cook the for a minute or so until it thickens a bit. Turn off the heat and let it sit until the tofu is done.
  11. Make the blue cheese by whisking all the ingredients together except the tofu.
  12. Make sure the water is all pressed out of the tofu, then crumble really well so it looks like cheese crumbles, and stir it into the dip. Set this aside.
  13. When the tofu is ready, toss it in the sauce and serve it immediately with blue cheese dip.
