Vegan St. Patrick’s Day Recipes for an Irish Meatless Monday

Welcome (back) to the Miratel blog for a St. Patrick’s Day inspired edition of our Meatless Monday vegan recipe series. Miratel took the Meatless Monday pledge to support reducing meat consumption 15% by eliminating it one day per week to preserve the health of our planet. We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.

It might seem difficult to celebrate a holiday with a vegan  meal but our weekly recipe share will prove that is just not the case. Today’s recipes for vegan Mushroom Stout Pie with Potato Biscuits from Post Punk Kitchen followed by vegan Irish Whiskey Cake from It’s a Greyt Vegan Life are excellent examples. Mushroom Stout Pie with Potato Biscuits Ingredients

For the stew:

  • 1 oz dried porcini mushrooms
  • 3 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 large onion, diced medium
  • 4 cloves garlic, minced
  • 8 oz cremini mushrooms, thinly sliced
  • 2 ribs celery, thinly sliced
  • 1 teaspoon dried rosemary
  • 2 teaspoons dried thyme
  • 1/2 lb carrots, peeled, sliced into thin half moons
  • 1 1/4 cups stout beer
  • 2 tablespoons tomato paste
  • Fresh black pepper (a lot!)
  • 1 1/4 teaspoons salt
  • 1/3 cup all-purpose flour
  • 3 cups cooked kidney beans – 2 15 oz cans rinsed & drained [see note for tofu version]

For the biscuits:

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup leftover mashed potatoes [see note on leftover mashed potatoes]
  • 3 tablespoons olive oil
  • 1/2 cup cold water

Make the stew:

  1. Place porcinis in a bowl that’s large enough to contain the 4 cups vegetable broth. If the porcinis look large, tear them into bite sized pieces. Boil the vegetable broth and pour it over the porcinis. Cover with a plate to keep hot, and prep everything you need for the recipes. This will soften them and make the recipe a bit faster.

Irish Whiskey Cake

Cake:

  • 1/2 cup golden or dark raisins
  • 1/3 cup Irish whiskey
  • 1-1/3 cups plain coconut milk, or other plain non-dairy milk
  • 2/3 cup canola oil
  • 1/2 cup room temperature coffee
  • 1-1/2 cups granulated sugar
  • 2-2/3 cups unbleached all-purpose flour, sifted
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda

 

Glaze:

  • 1/2 cup brown sugar
  • 2 Tablespoons non-dairy butter
  • 1/4 cup Irish whiskey, or more to thin to desired consistency

Icing:

  • 3 cups powdered sugar
  • 1/2 cup non-dairy butter
  • 4 to 6 Tablespoons Irish whiskey

To make the cake:

  1. Whisk together the milk, oil and coffee in a medium bowl. In a larger bowl, add the sugar and then sift in the flour, baking powder, and baking soda. Add the wet mixture to the dry mixture and combine with a handheld mixer.
