Meatless Monday with a Vegan Christmas Recipe Roundup

Hello and welcome to the Vegan Christmas edition of our Meatless Monday recipe share series. Miratel took the Meatless Monday pledge as it encourages eliminating meat from your diet one day per week to preserve the health of our planet (and ourselves!). We consider our support of this great movement part of our CSR business strategies as it spreads awareness of the impact of our food choices on our environment.

Since it is the holiday season, we thought we would feature some vegan dishes that would be perfect for a holiday meal – whether it’s elegant or casual. We have previously featured a complete Thanksgiving vegan roast dinner as well as a fancy-schmancy Christmas Vegetarian (not vegan) wellington that would also be perfect but today we’re doing something a little different. Today we are going to bring some all-vegan recipes from around the web that will make your holiday meals much more merrier for both vegans and omnis.

• Vegan Egg Nog – Just because you pass on eggs doesn’t mean you have to forgo the nog and this simple recipe from Girl Makes Food is an excellent substitute for the traditional variety.
• Vegan Brandade of White Beans with Baby Artichokes – We featured this vegan take on a French classic from My Recipes that is sure to class up any holiday meal.
• Lentil and Veg Mini Sheppard Pie – These simple elegant pies from One Green Planet are just as tasty and comforting while being delicate and healthy. Everything you want for the holidays.
• Jamie Oliver’s Tagliatelle with The Greatest Ever Tomato Sauce – We highlighted this recipe from celebrity chef Jamie Oliver and the name really does hold up. Try it and see for yourself.
• Chickpea Ala King – Hold the turkey but not the great flavours with this traditional dish from Gluten Free Vegan.
• Ginger Cookies – One Green Planet has brought these spiced ginger cookies with a hint of cinnamon that scream holidays with every bit.
• Vegan Shortbread Cookies – These easy to make cookies are a holiday staple and can be shaped and flavoured into any number of options. Great recipe from Vegan Occasions.

There are countless recipes on the web – heck we’ve featured many here through our Meatless Monday recipe share series. Even though the holidays are a time to (over)indulge, that doesn’t mean you can’t still keep it kind and plant-based.
